During the summer there are only a few things better than fresh corn on the cob. Combine that with garden fresh Parsley and a garden onion and you have one of the most delightful summer salads your tastebuds could want.
Unfortunately it’s winter and there is no ‘real’ garden fresh vegetables available up north. I was craving a bit of sunshine so I decided to make one of my favorite summer salads with ingredients I could find in the cold winter months, and the result was surprisingly summery! And the best part, this recipe calls for 5 ingredients and it only takes 10 minutes to make.
Ingredients
- 1 Small Red Onion
- 1/2 Cup Parsley (flat or curly- your choice)
- 1 Bag Frozen Corn
- 3 TBSP Red Wine Vinegar
- 3 TBSP Extra Virgin Olive Oil
- Salt & Pepper to taste
Directions
- Chop onion.
- Chop parsley.
- Add chopped onion to medium bowl.
- Add bag of corn to onions.
- Add parsley.
- Add vinegar & oil.
- Add salt & pepper to taste.
- Stir.
- Enjoy!
This said can be made a day ahead of time and can be kept in the refrigerator overnight- this helps all of the flavors meld together even more.
