Farm Fresh Corn Salad

During the summer there are only a few things better than fresh corn on the cob. Combine that with garden fresh Parsley and a garden onion and you have one of the most delightful summer salads your tastebuds could want.

Unfortunately it’s winter and there is no ‘real’ garden fresh vegetables available up north. I was craving a bit of sunshine so I decided to make one of my favorite summer salads with ingredients I could find in the cold winter months, and the result was surprisingly summery! And the best part, this recipe calls for 5 ingredients and it only takes 10 minutes to make.

2 corn salad
Bag of corn, one onion, bunch of parsley, olive oil & red wine vinegar.

Add chopped onions to bowl.

Add the bag of corn to bowl.

Add parsley, oil & vinegar.  Salt and pepper to taste.

Mix together.

Enjoy while dreaming of summer.
